Which dataset matches the population you mean?
County Business Patterns covers establishments with paid employees and reports measures including establishments, employment and payroll. Nonemployer Statistics describes businesses without paid employees and includes establishment counts and receipts. Combining their totals requires a clear question and compatible scope.
An establishment is not the same as a customer-facing operating format. A broad industry category can contain several service styles, and one company can operate more than one location. A county count therefore does not directly establish how many competitors offer your intended menu, delivery arrangement or billing unit.
What would a reviewable table selection look like?
For a defined historical example, select the 2023 County Business Patterns dataset, the county geography for Los Angeles County, California, and the applicable NAICS definition before extracting establishments. Record state 06 and county 037, the industry code, employer scope and source flags alongside the result. This article does not assert an extracted establishment count.
The 2023 variable dictionary and API examples document the available fields and queries. On the October 2, 2026 check, the examples page required an API key. Retrieve the actual response through an authorized API or published table; an unexecuted query is not a verified observation.

What should a missing or protected value mean?
Keep disclosure and quality flags with the values. A withheld or absent measure is not zero, and it should not become a numerical estimate without an explicitly justified method. The Nonemployer Statistics methodology describes disclosure protection and cautions relevant to interpreting published receipts and historical comparability.
Use matching industry definitions and reference periods when comparing places or years. Record changes in geography or methodology rather than treating every difference as business growth. A source’s release date also differs from the reference year: a recently downloaded historical table remains a historical observation.
Which planning claims still need other evidence?
Counts can inform market orientation and a field-research shortlist. They do not supply achievable order volumes, pricing, staffing productivity or contribution margins for a particular business. Receipts divided by establishments, where valid, remain an aggregate average with scope limitations; they are not the revenue target of a new operator.
Build the operating forecast from the sale unit, practical capacity and evidence for the intended format. Use Census data to describe its broader context, then verify the actual local competitors and customer proposition. The business-format catalogue helps distinguish operating mechanisms; it does not turn an industry table into a validated projection.
